I have often used readymade achar masala to make quick instant achar like green apple achar, carrot achar, mango achar, and they have served me well. My favourite brand to use is Mangal’s as it has a nice balanced flavour. However, I do find making a fresh batch of masala is even more rewarding because you get the fresh full flavour of the spices. 

When using this achar masala powder, you do not need to add any extra ingredients like garlic or chillies. Although, you can add a teaspoon of sugar for some sweetness. Add in some mustard oil (warmed then cooled completely) to your achar and mix in achar masala, enough to coat all the ingredients. Store in the fridge if your achar is an instant one or outside if it has been completely sun dried or cooked.

Ingredients

  • 2 Tsp Methi (Fenugreek Seeds)

  • 1 Tsp Jeera (Cumin Seeds)

  • 1 Tsp Sarso (Mustard Seeds)

  • 1 Tsp Chilli Flakes/Powder

  • ½ Tsp Kalonji Seeds (Nigella Seeds)

Directions

  • Dry fry all ingredients except chilli powder/flakes
  • Grind to seeds to powder and mix with chilli flakes
  • Store in airtight jar
