Guacamole Dip Made With Fijian Avocados

Those beautiful avocados you see shimmering on the stands in the Suva Market make the best guacamole! Guacamole is Mexican in origin and makes a delicious dip for your Friday evening wind down session or to share with guests. Try it with fries or potato chips as a dip…with cold beer or any cold drink and you have yourself a perfect chaser! The recipe is as follows:

Ingredients

  • 1 Large Ripe Fijian Avocado
  • 2 Tablespoons Lemon Juice
  • 4 Small Tomatoes, Chopped
  • Fresh Coriander Leaves
  • Fresh Mint Leaves
  • 1 Garlic Clove
  • 2 Small Green Chillies (or to your taste)
  • Salt – To Taste
  • 1/4 Teaspoon Ground Pepper

Directions

  1. Cut the avocado in half and remove the seeds and skin
  2. Chop the avocado roughly into small pieces and put them in a large bowl or in a mortar
  3. Then place all the other listed ingredients into the bowl and crush them into a paste like above (using a fork makes the process quicker if you are using a bowl)
  4. Sprinkle with extra coriander for garnish and it’s ready to eat!
