Fluffy Brownies with Chocolate Frosting

These chocolatey, rich and fluffy brownies are really great. I have been making them for a while but couldn’t quite hit the mark. Either it would be dry, sunken in or really sweet but finally I made my perfect brownies. Although the recipe seems pretty straightforward, it is a little tricky so if you don’t succeed the first time, try again by adjusting the ingredients. Different brands of flour, cocoa powder and baking powder can also be the cause. So don’t give up in just one attempt, keep trying!

I’m being sugar conscious here and it’s still pretty sweet so be sure to adjust to your liking. The frosting also has sugar so your fudge brownies will be sweet and delicious without the added guilt.

Ingredients

  • ⅓ Cup Cocoa Powder
  • ½ Cup Sugar
  • 115g Butter
  • 2 Eggs
  • 1 Tsp Vanilla
  • ½ Cup Self- Raising Flour
  • 3 Tbsp Chopped Almonds
  • Pinch of Salt

Frosting

Ingredients

  • 3 Tbsp Butter
  • 3 Tbsp Cocoa Powder
  • 1 Tsp Vanilla
  • ¼ Cup Icing Sugar
  • 1 Tbsp Chopped Almonds
  • 2 Tbsp Milk

Directions

  1. First, bring the butter to room temperature and spread it flat with a spatula or spoon. Then add the sugar and combine till creamy
  2. Meanwhile, pre-heat the oven to 160 degrees or to medium heat
  3. In a bowl whisk the eggs and vanilla then mix with the butter and sugar mixture
  4. In another bowl, sift the flour and cocoa powder together and sprinkle in the pinch of salt
  5. Then mix the dry ingredients (flour, cocoa powder and salt) to the eggs mixture. Now add in the chopped almonds (remember to save some for the frosting) and combine
  6. Using a spatula, transfer the brownie batter into a bread tin or a small baking tray (lined with baking paper/greased with butter) and bake for 20-30 minutes (or check with a toothpick and if it comes out clean, it’s done)
  7. While the brownies are baking, prepare the frosting: Place the butter, cocoa powder, icing sugar, vanilla and milk into a small bowl and mix till creamy (add more milk to soften if needed). Set this aside
  8. Once the brownie is done, carefully transfer to a clean cutting board and while still hot, spread the frosting and chopped almonds on top
  9. Then cut into nice squares and serve with tea or coffee.
